Dig Inn Basil Whipped Cream
Did you know that Bowery Basil is now served at all NYC Dig Inn locations? To celebrate, we helped spread the word for their new Tribeca location this holiday season with some delicious hot cocoa topped with Bowery-basil infused whipped cream. Enjoy the recipe from the Dig Inn team below:
4 cups heavy cream, halved in separate 2 cup batches
2.75 oz Bowery Basil
2 tablespoons confectioner's sugar
1 pinch sea salt
In a small pot, bring 2 cups of the heavy cream to a simmer. Add the Bowery Basil to the simmering cream. Cook until basil is soft, wilted, and the mixture is aromatic.
Prepare an ice bath. When ready, remove cream mixture from heat and pour into a container over the ice bath to chill. Next, blend the mixture until it becomes celadon green and most of the basil is incorporated.
Pour the remaining 2 cups of heavy cream in a medium sized bowl and whisk in the 2 tablespoons of confectioner’s sugar and pinch of sea salt. Place a fine sieve over the bowl, and pour the cream and basil mixture into the bowl.
Whip until the cream forms medium-stiff peaks. Alternatively, serve out of an iSi can.
Prepares 1 quart of fresh whipped cream. Recipe can be made one day in advance and kept in the refrigerator.
